  What exactly does this mean to you?  Think about the difference between a fine piece of cutlery you can re-sharpen if it becomes dull, and a shiny stainless steel butter knife you can't do anything with.  Both blades are stainless steel, but that's where the similarity ends.  If it's not the right steel, they won't cut as well or as long.
